We only cultivate the Albariño
variety within our eight vineyards situated in “El
Salnés” (RiasBaixas), with a total extension of 2ha and
with planting dates between 1910 and 1984. Yields can vary depending on
the year between 5,000 and 7,000 kg (very far away from the 12000kg
authorised by the Regulatin Council RiasBaixas).
For our vineyards cultivation we apply the principles of integrated
production seeking a biological balance that will minimize the
intervention against pests. The untilled land allows the recovery of
microbiological life in the soil surface layer, improving, also, their
physical characteristics and helping the development of auxiliary
fauna.Protection policy against pests is based from the principle to
apply only essential treatments. That’s why a permanent control
of the vineyard on a weekly basis and a follow-up of meteorologicaldata
is fundamental.
We do not apply any type of herbicide and try to avoid the use
of insecticides. In the case of serious danger to the vineyard , we
apply only products authorised for use in Integrated Production with a
very low toxicological profile respecting the auxiliary fauna.
Obtaining
the highest quality grapes can only be achieved with controlled
strength strains, where the vegetation allows insolation and clusters
aeration.Therefore, the fertilization and pruning made by us is aimed
to control the strains production and its strength.
Finally, working
on green (when vineyards became more alive) contribute to the clusters
optimal maturation. So, we remove wasted vegetation (“desnietado”: take
secundary shoots out form the tendril) and (“deshojado”: take leafs off
from the vine), remove clusters because they will not ripen properly
(clusters cleaning) and we review by harvest all the clusters,
eliminating unsuitable grapes (pre- harvest).
Vintage is always done
by hand, with a double selection of clusters: first,directly on the
vineyards by the vintagers and later in the Winery, after they are
carried out in small boxes of 15kg.
